Pufferfish

The pufferfish is a slow, blunt-toothed reef and coastal fish with two remarkable defences: it can blow itself up into a rigid, spiky ball, and its body carries one of the most powerful poisons in nature. In Japan the most famous species is served, very carefully, as the delicacy fugu.
Overview
There are around 200 pufferfish species (family Tetraodontidae) in warm seas worldwide, with a few in fresh water. This profile centres on the tiger pufferfish or torafugu (Takifugu rubripes), the premium fugu species of the seas around Japan, Korea, and China. Pufferfish are generally solitary, live near the bottom over reefs, sand, and estuary mudflats, and are unhurried swimmers, sculling with their fins and steering with a small tail — they trade speed for their two extreme defences.
The balloon trick
A threatened pufferfish gulps water into an enormously stretchy stomach, and because it has lost its ribs and pelvic bones there is nothing to limit the expansion. In seconds it becomes two or three times its resting size, its skin drawn tight and, in spiny species, bristling with erect spines. To a predator it goes from a mouth-sized meal to a large, hard, prickly sphere. The fish deflates when the danger passes; inflating is energetically costly and stressful, so it is used sparingly.
The poison
Pufferfish tissues contain tetrodotoxin (TTX), a nerve poison that shuts down the signals between nerves and muscles. A poisoned person becomes numb, then paralysed, and can die from being unable to breathe — all while remaining aware. TTX is more than a thousand times deadlier than cyanide by weight, and there is no antidote; survival depends on breathing support until the body clears the toxin over a day or two.
The pufferfish does not synthesise TTX — it accumulates it from bacteria in its food and stores it mainly in the liver, ovaries, gut, and skin. Its own nerve channels are a resistant, mutated form, so it is unharmed. Farmed pufferfish fed a clean diet are non-toxic.
Fugu
Despite the danger, torafugu is a celebrated food in Japan. Preparing it legally requires a licence earned through years of apprenticeship and a demanding exam; the chef removes the toxic organs, rinses the flesh, and slices it into translucent sashimi. Modern regulation and training have reduced fugu deaths to a rare event, and most now involve people who catch and cook the fish themselves.
Status
Wild torafugu stocks are Near Threatened and declining from decades of intensive fishing, and Japan’s fugu supply is now largely met by aquaculture. Pufferfish as a group face the usual coastal pressures — habitat loss, pollution, and bycatch — and the smaller species are also collected for the aquarium trade, where the round-bodied “puffers” are popular despite their specialised care needs.

How does a pufferfish puff up?
It has a highly elastic stomach and no ribs or pelvic bones to get in the way, so when threatened it rapidly gulps large amounts of water (or air, if it is out of the water) into the stomach, ballooning to two or three times its normal size within seconds. The skin stretches smooth and, in spiny species, the scales stand out as sharp spines. An inflated pufferfish is hard for a predator to bite, swallow, or even get its mouth around, and it deflates once the threat passes. Repeated puffing is stressful and can harm the fish, so it is a last resort.
How poisonous is a pufferfish?
Extremely. Its tissues — especially the liver, ovaries, intestines, and skin — contain tetrodotoxin, a compound that blocks the sodium channels of nerves, causing numbness, paralysis, and death from respiratory failure while the victim stays fully conscious. It is estimated to be over 1,000 times more toxic than cyanide by weight, a single fish can hold enough to kill dozens of people, and there is no antidote — treatment is life support until the toxin clears. The fish itself is immune because its own sodium channels are a mutated, resistant form.
Where does the pufferfish get its poison?
It does not make it. Tetrodotoxin is produced by marine bacteria (including Vibrio and Pseudomonas species), which pass up the food chain into the shellfish, starfish, and worms the pufferfish eats; the fish then concentrates the toxin in its organs and uses it as a defence. Pufferfish raised in captivity on a toxin-free diet do not become poisonous, and some fish farms now produce "non-toxic fugu" for this reason.
Is it safe to eat fugu?
When prepared by a trained, licensed chef, yes — fugu is a prized dish in Japan, served as thin sashimi, in hot pots, and fried. Chefs undergo two to three years of apprenticeship and must pass a rigorous exam to get a fugu licence, and they carefully remove and dispose of the toxic organs. Poisonings today almost always come from amateurs preparing their own catch, or from eating the liver (once a delicacy, now banned in restaurants). Deaths in Japan have fallen to a handful a year or fewer.
